🍇 Roasted Grape and Goat Cheese Crostini Recipe

Ingredients

  • 2 cups red seedless grapes
  • 1 tablespoon neutral oil (like avocado or grapeseed)
  • 1 tablespoon balsamic vinegar
  • ½ French baguette
  • 1–2 cloves garlic
  • 8 ounces goat cheese
  • 2 tablespoons balsamic vinegar (for drizzling)
  • Fresh cracked black pepper
  • 4–5 sprigs fresh thyme
  • Flaky sea salt for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place grapes in a roasting pan. Toss with neutral oil, salt, pepper, and a few sprigs of thyme. Roast for 25–30 minutes, until grapes are soft, some are burst, and juices are sticky.
  3. Drizzle roasted grapes with a splash of quality balsamic vinegar and let them rest.
  4. While grapes are resting, slice the baguette into ½-inch slices and toast on a baking sheet in the oven for 5–8 minutes, until crisp and golden.
  5. Remove from oven and rub each slice with a peeled clove of garlic.
